Description

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup all-purpose flour
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 1/4 cup capers, drained and rinsed
  • 1/3 cup fresh lemon juice
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. Pound the chicken breasts to about 1/2 inch thickness. Season them with salt and pepper, then lightly coat them with flour, shaking off any excess.
  2. Heat olive oil in a large saucepan over medium-high heat. Add the chicken and cook until golden brown on both sides and cooked through, about 3-4 minutes per side.
  3. Remove the chicken from the pan and set aside. In the same pan, add butter, capers, lemon juice, and chicken broth, stirring to combine. Bring to a simmer and return the chicken to the pan, cooking for an additional 5 minutes. Garnish with fresh parsley before serving.
