For the Crust:
- 1 lb ground chicken
- 4 pita breads
- 1 cup crumbled feta cheese
- 1/2 cup Greek yogurt
- 2 tbsp honey
- 1 lemon (juiced and zested)
- 1 tsp red pepper flakes
- 2 cloves garlic (minced)
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- 1 tbsp olive oil
- 1/2 cup diced cucumber
- 1/4 cup diced red onion
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a bowl, combine feta, Greek yogurt, honey, lemon juice, lemon zest, and red pepper flakes. Mix until smooth and set aside.
- Heat olive oil in a skillet over medium heat. Add garlic and sauté for 1 minute until fragrant.
- Add ground chicken, oregano, cumin, salt, and pepper. Cook for 8-10 minutes, breaking it up, until browned and cooked through.
- Warm the pita breads in a toaster or oven until soft and pliable.
- Fill each pita with the cooked chicken mixture, top with diced cucumber and red onion, and drizzle generously with the feta cream.
