A vibrant and healthy bowl featuring seasoned grilled chicken, fluffy rice, crisp vegetables, and creamy tzatziki sauce topped with tangy feta cheese.

For the Crust:

  • 1 lb boneless, skinless chicken breasts, cubed
  • 2 cups cooked basmati rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1/2 cup tzatziki sauce
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Season the chicken cubes with olive oil, oregano, garlic powder, salt, and pepper. Grill or pan-sear until fully cooked, about 6-8 minutes.
  2. Divide the cooked rice among four bowls. Top with the grilled chicken, cherry tomatoes, cucumber, red onion, and Kalamata olives.
  3. Drizzle each bowl generously with tzatziki sauce and sprinkle with crumbled feta cheese.
  4. Garnish with fresh parsley and serve immediately.
