For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 2 cups cooked basmati rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and halved
- 1/2 cup crumbled feta cheese
- 1/2 cup tzatziki sauce
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Season the chicken cubes with olive oil, oregano, garlic powder, salt, and pepper. Grill or pan-sear until fully cooked, about 6-8 minutes.
- Divide the cooked rice among four bowls. Top with the grilled chicken, cherry tomatoes, cucumber, red onion, and Kalamata olives.
- Drizzle each bowl generously with tzatziki sauce and sprinkle with crumbled feta cheese.
- Garnish with fresh parsley and serve immediately.
