For the Crust:
- 2 boneless, skinless chicken breasts, cubed
- 1 cup long-grain white rice, cooked
- 1/2 cup crumbled feta cheese
- 1/4 cup Kalamata olives, pitted and halved
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 2 tablespoons olive oil
- 1 lemon, juiced
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Cook rice according to package instructions and set aside to cool.
- In a bowl, toss chicken cubes with olive oil, oregano, garlic powder, salt, and pepper. Cook in a skillet over medium heat until golden and cooked through, about 8-10 minutes.
- In a large bowl, combine cooked rice, cucumber, cherry tomatoes, red onion, and Kalamata olives.
- Add the cooked chicken to the rice mixture. Drizzle with lemon juice and toss gently to combine.
- Top with crumbled feta cheese and fresh parsley before serving.
