Description

A vibrant and healthy bowl featuring seasoned chicken, fluffy rice, briny olives, and creamy feta cheese, all tossed in a zesty lemon-herb dressing.

For the Crust:

  • 2 boneless, skinless chicken breasts, cubed
  • 1 cup long-grain white rice, cooked
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives, pitted and halved
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Cook rice according to package instructions and set aside to cool.
  2. In a bowl, toss chicken cubes with olive oil, oregano, garlic powder, salt, and pepper. Cook in a skillet over medium heat until golden and cooked through, about 8-10 minutes.
  3. In a large bowl, combine cooked rice, cucumber, cherry tomatoes, red onion, and Kalamata olives.
  4. Add the cooked chicken to the rice mixture. Drizzle with lemon juice and toss gently to combine.
  5. Top with crumbled feta cheese and fresh parsley before serving.
