For the Crust:
- 1 lb boneless, skinless chicken breasts, cut into strips
- 2 cups cooked basmati rice
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and sliced
- 1/2 cup crumbled feta cheese
- 1/2 cup plain Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
1. Prepare the Crust:
- Season chicken strips with olive oil, oregano, garlic powder, salt, and pepper. Grill or pan-sear until fully cooked, about 6-8 minutes per side.
- In a small bowl, mix Greek yogurt, lemon juice, minced garlic, and chopped dill to make the tzatziki sauce. Refrigerate until ready to serve.
- Assemble bowls by dividing cooked rice among four bowls. Top with grilled chicken, cucumber, cherry tomatoes, red onion, and Kalamata olives.
- Drizzle tzatziki sauce over each bowl and sprinkle with crumbled feta cheese. Garnish with fresh dill and serve immediately.
