A vibrant and healthy bowl featuring seasoned grilled chicken, fluffy rice, crisp vegetables, and a creamy tzatziki sauce topped with tangy feta cheese.

For the Crust:

  • 1 lb boneless, skinless chicken breasts, cut into strips
  • 2 cups cooked basmati rice
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

1. Prepare the Crust:

  1. Season chicken strips with olive oil, oregano, garlic powder, salt, and pepper. Grill or pan-sear until fully cooked, about 6-8 minutes per side.
  2. In a small bowl, mix Greek yogurt, lemon juice, minced garlic, and chopped dill to make the tzatziki sauce. Refrigerate until ready to serve.
  3. Assemble bowls by dividing cooked rice among four bowls. Top with grilled chicken, cucumber, cherry tomatoes, red onion, and Kalamata olives.
  4. Drizzle tzatziki sauce over each bowl and sprinkle with crumbled feta cheese. Garnish with fresh dill and serve immediately.
