Juicy, marinated chicken skewers grilled to perfection and served with a creamy homemade hummus spread.

For the Crust:
- 1 lb boneless, skinless chicken breast, cut into cubes
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp paprika
- Salt and black pepper to taste
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup tahini
- 3 tbsp lemon juice
- 2 tbsp olive oil
- 1 clove garlic
- 1/4 tsp cumin
- Salt to taste
- 2–3 tbsp water
- Wooden skewers, soaked in water for 30 minutes
Instructions
1. Prepare the Crust:
- In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper. Add chicken cubes and marinate for at least 30 minutes.
- Thread marinated chicken onto soaked wooden skewers.
- Preheat grill or grill pan to medium-high heat. Grill skewers for 6-8 minutes per side, until chicken is cooked through.
- For the hummus, combine chickpeas, tahini, lemon juice, olive oil, garlic, cumin, and salt in a food processor. Blend until smooth, adding water as needed for desired consistency.
- Serve grilled chicken skewers with hummus spread on the side.
