Description

Juicy, marinated chicken skewers grilled to perfection and served with a creamy homemade hummus spread.


Ingredients

For the Crust:

  • 1 lb boneless, skinless chicken breast, cut into cubes
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 clove garlic
  • 1/4 tsp cumin
  • Salt to taste
  • 23 tbsp water
  • Wooden skewers, soaked in water for 30 minutes

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper. Add chicken cubes and marinate for at least 30 minutes.
  2. Thread marinated chicken onto soaked wooden skewers.
  3. Preheat grill or grill pan to medium-high heat. Grill skewers for 6-8 minutes per side, until chicken is cooked through.
  4. For the hummus, combine chickpeas, tahini, lemon juice, olive oil, garlic, cumin, and salt in a food processor. Blend until smooth, adding water as needed for desired consistency.
  5. Serve grilled chicken skewers with hummus spread on the side.

Notes

You can customize the seasonings to taste.
