Juicy chicken skewers marinated in Mediterranean spices, grilled to perfection and served with a creamy homemade hummus spread.

For the Crust:
- 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/4 cup lemon juice
- Salt and pepper to taste
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tbsp tahini
- 2 cloves garlic, minced
- 3 tbsp lemon juice
- 2 tbsp olive oil
- 1/4 cup water
- Salt to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions
1. Prepare the Crust:
- In a bowl, combine olive oil, paprika, cumin, garlic powder, lemon juice, salt, and pepper. Add chicken cubes and toss to coat. Marinate for at least 30 minutes.
- Thread marinated chicken onto soaked wooden skewers.
- Preheat grill or grill pan to medium-high heat. Grill skewers for 6-8 minutes per side, until chicken is cooked through.
- For the hummus, blend chickpeas, tahini, garlic, lemon juice, olive oil, water, and salt in a food processor until smooth.
- Serve chicken skewers with a generous dollop of hummus spread.
