Description

Juicy chicken skewers marinated in Mediterranean spices, grilled to perfection and served with a creamy homemade hummus spread.


Ingredients

For the Crust:

  • 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 cup lemon juice
  • Salt and pepper to taste
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp tahini
  • 2 cloves garlic, minced
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/4 cup water
  • Salt to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions

1. Prepare the Crust:

  1. In a bowl, combine olive oil, paprika, cumin, garlic powder, lemon juice, salt, and pepper. Add chicken cubes and toss to coat. Marinate for at least 30 minutes.
  2. Thread marinated chicken onto soaked wooden skewers.
  3. Preheat grill or grill pan to medium-high heat. Grill skewers for 6-8 minutes per side, until chicken is cooked through.
  4. For the hummus, blend chickpeas, tahini, garlic, lemon juice, olive oil, water, and salt in a food processor until smooth.
  5. Serve chicken skewers with a generous dollop of hummus spread.

Notes

You can customize the seasonings to taste.
