For the Crust:
- 1 lb ground chicken
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 4 large flour tortillas or wraps
- 1 cup chopped romaine lettuce
- 1/2 cup diced cucumber
- 1/2 cup cherry tomatoes, halved
- 1/4 cup sliced red onion
- 1/4 cup crumbled feta cheese
- 1/4 cup plain Greek yogurt
- 2 tbsp honey
- 1 tbsp lemon juice
- 1/2 tsp red pepper flakes
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- In a bowl, mix Greek yogurt, crumbled feta, honey, lemon juice, and red pepper flakes until smooth to make the Spicy Lemon Honey Feta Cream. Set aside.
- Heat olive oil in a skillet over medium heat. Add ground chicken, oregano, smoked paprika, garlic powder, salt, and pepper. Cook for 8-10 minutes, breaking it up, until browned and cooked through.
- Warm tortillas according to package instructions. Spread a generous spoonful of the feta cream onto each tortilla.
- Top with cooked ground chicken, romaine lettuce, cucumber, cherry tomatoes, red onion, and extra feta if desired.
- Fold the sides of the tortilla inward and roll tightly to form a wrap. Slice in half if desired and garnish with fresh parsley. Serve immediately.
