For the Crust:
- 4 cod fillets (6 oz each)
- 1 lb fresh green beans, trimmed
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- 2 tbsp fresh parsley, chopped
- 1 tsp dried oregano
- Salt and black pepper to taste
- 1/4 cup chicken or vegetable broth
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Arrange cod fillets and green beans on a baking sheet.
- In a small bowl, whisk together olive oil, garlic, lemon juice, lemon zest, parsley, oregano, salt, and pepper.
- Brush the lemon herb sauce generously over the cod fillets and drizzle the remaining sauce over the green beans.
- Pour broth around the green beans to keep them moist. Bake for 15-20 minutes, or until cod is flaky and green beans are tender-crisp.
- Serve immediately, garnished with additional fresh parsley if desired.
