Description

A light and flavorful dish featuring tender cod fillets topped with a zesty lemon herb sauce, served alongside crisp green beans.


Ingredients

For the Crust:

  • 4 cod fillets (6 oz each)
  • 1 lb fresh green beans, trimmed
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • 1/4 cup chicken or vegetable broth

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Arrange cod fillets and green beans on a baking sheet.
  2. In a small bowl, whisk together olive oil, garlic, lemon juice, lemon zest, parsley, oregano, salt, and pepper.
  3. Brush the lemon herb sauce generously over the cod fillets and drizzle the remaining sauce over the green beans.
  4. Pour broth around the green beans to keep them moist. Bake for 15-20 minutes, or until cod is flaky and green beans are tender-crisp.
  5. Serve immediately, garnished with additional fresh parsley if desired.
