For the Crust:
- 1 lb ground beef
- 1 red bell pepper, sliced
- 1 yellow onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- 1/4 cup crumbled feta cheese
- 2 tbsp chopped fresh parsley
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add ground beef and cook until browned, breaking it up with a spoon.
- Add onion, bell pepper, and garlic; stir fry for 4-5 minutes until vegetables soften.
- Stir in zucchini, cherry tomatoes, oregano, paprika, salt, and pepper; cook for another 5-7 minutes.
- Remove from heat, sprinkle with feta cheese and parsley before serving.
