A quick and flavorful stir fry featuring ground beef, fresh vegetables, and Mediterranean spices, perfect for a healthy weeknight dinner.

For the Crust:

  • 1 lb ground beef
  • 1 red bell pepper, sliced
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/4 cup crumbled feta cheese
  • 2 tbsp chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add ground beef and cook until browned, breaking it up with a spoon.
  3. Add onion, bell pepper, and garlic; stir fry for 4-5 minutes until vegetables soften.
  4. Stir in zucchini, cherry tomatoes, oregano, paprika, salt, and pepper; cook for another 5-7 minutes.
  5. Remove from heat, sprinkle with feta cheese and parsley before serving.

You can customize the seasonings to taste.
