For the Crust:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 yellow onion, sliced
- 8 ounces egg noodles
- 2 tablespoons butter
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss chicken breasts with 1 tablespoon olive oil, oregano, thyme, garlic powder, salt, and pepper. Place on a baking sheet.
- In a bowl, combine bell pepper, zucchini, and onion with remaining olive oil, salt, and pepper. Spread around chicken on baking sheet. Roast for 20-25 minutes until chicken is cooked through and veggies are tender.
- While roasting, cook egg noodles according to package directions until al dente. Drain and toss with butter.
- Slice chicken into strips. Serve chicken and roasted veggies over buttered egg noodles, garnished with fresh parsley.
