For the Crust:

  • 1 lb ground lamb
  • 1/2 cup breadcrumbs
  • 1 egg, beaten
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 cups prepared hummus
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese
  • 2 tbsp olive oil
  • Lemon wedges for serving

Instructions

1. Prepare the Crust:

  1. In a bowl, combine ground lamb, breadcrumbs, egg, garlic, cumin, paprika, salt, and pepper. Mix well and form into 1-inch meatballs.
  2. Heat olive oil in a skillet over medium heat. Cook meatballs for 8-10 minutes, turning occasionally, until browned and cooked through.
  3. Spread hummus evenly into four bowls.
  4. Top each bowl with cucumber, cherry tomatoes, red onion, parsley, and feta cheese.
  5. Arrange cooked meatballs over the vegetables and drizzle with additional olive oil if desired. Serve with lemon wedges.
