Description

A vibrant and creamy salad featuring marinated chickpeas, fresh vegetables, and rich burrata cheese, all tossed in a zesty lemon vinaigrette.


Ingredients

For the Crust:

  • 2 cans (15 oz each) chickpeas, rinsed and drained
  • 1 large burrata cheese ball
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 cucumber, diced
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper to make the vinaigrette.
  2. Add chickpeas, cherry tomatoes, red onion, cucumber, olives, and parsley to the bowl. Toss well to coat with the vinaigrette.
  3. Let the salad marinate for at least 10 minutes to allow flavors to meld.
  4. Gently tear the burrata into pieces and arrange over the top of the salad just before serving.
  5. Serve immediately, garnished with additional parsley if desired.

Notes

You can customize the seasonings to taste.
