A vibrant and creamy salad featuring marinated chickpeas, fresh vegetables, and rich burrata cheese, all tossed in a zesty lemon vinaigrette.

For the Crust:
- 2 cans (15 oz each) chickpeas, rinsed and drained
- 1 large burrata cheese ball
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 cucumber, diced
- 1/4 cup Kalamata olives, pitted and halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- Juice of 1 lemon
- 1 garlic clove, minced
- 1 tsp dried oregano
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper to make the vinaigrette.
- Add chickpeas, cherry tomatoes, red onion, cucumber, olives, and parsley to the bowl. Toss well to coat with the vinaigrette.
- Let the salad marinate for at least 10 minutes to allow flavors to meld.
- Gently tear the burrata into pieces and arrange over the top of the salad just before serving.
- Serve immediately, garnished with additional parsley if desired.
