Description

A vibrant, creamy salad featuring chickpeas, fresh vegetables, and rich burrata cheese, all tossed in a zesty lemon vinaigrette.


Ingredients

For the Crust:

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 8 oz burrata cheese
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 cucumber, diced
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine chickpeas, cherry tomatoes, red onion, cucumber, olives, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper to make the vinaigrette.
  3. Pour the vinaigrette over the chickpea mixture and toss gently to coat.
  4. Place the burrata cheese in the center of the salad or tear it into pieces and distribute evenly.
  5. Serve immediately, garnished with additional parsley if desired.

Notes

You can customize the seasonings to taste.
