A vibrant, creamy salad featuring chickpeas, fresh vegetables, and rich burrata cheese, all tossed in a zesty lemon vinaigrette.

For the Crust:
- 1 can (15 oz) chickpeas, rinsed and drained
- 8 oz burrata cheese
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 cucumber, diced
- 1/4 cup Kalamata olives, pitted and halved
- 1/4 cup fresh parsley, chopped
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 garlic clove, minced
- 1 tsp dried oregano
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine chickpeas, cherry tomatoes, red onion, cucumber, olives, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper to make the vinaigrette.
- Pour the vinaigrette over the chickpea mixture and toss gently to coat.
- Place the burrata cheese in the center of the salad or tear it into pieces and distribute evenly.
- Serve immediately, garnished with additional parsley if desired.
