Description

A golden bake bursting with Mediterranean flavors, reminiscent of a coastal holiday.


Ingredients

For the Crust:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup olive oil
  • 3/4 cup milk
  • 2 eggs
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp dried oregano

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, mix olive oil, milk, and eggs until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fold in sun-dried tomatoes, olives, feta cheese, rosemary, and oregano.
  6. Pour batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted comes out clean.
  7. Let cool for 10 minutes before slicing and serving.

You can customize the seasonings to taste.
