For the Crust:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup olive oil
- 3/4 cup milk
- 2 eggs
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup feta cheese, crumbled
- 1 tbsp fresh rosemary, chopped
- 1 tsp dried oregano
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together flour, baking powder, and salt.
- In another bowl, mix olive oil, milk, and eggs until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in sun-dried tomatoes, olives, feta cheese, rosemary, and oregano.
- Pour batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted comes out clean.
- Let cool for 10 minutes before slicing and serving.
