A vibrant, low-carb bowl featuring tender Greek-seasoned chicken, fresh Mediterranean vegetables, and a homemade creamy tzatziki sauce, perfect for a healthy and satisfying meal.

For the Crust:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tbsp Greek seasoning blend (or mix of oregano, garlic powder, onion powder, and paprika)
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 4 oz feta cheese, crumbled
  • 1 cup plain Greek yogurt
  • 1 clove garlic, minced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Lettuce or cauliflower rice for serving (optional)

Instructions

1. Prepare the Crust:

  1. In a bowl, toss chicken pieces with olive oil, Greek seasoning, salt, and pepper. Heat a skillet over medium-high heat and cook chicken for 6-8 minutes until browned and cooked through. Set aside.
  2. In another bowl, combine Greek yogurt, minced garlic, chopped dill, lemon juice, and a pinch of salt. Stir well to make the tzatziki sauce. Refrigerate until ready to serve.
  3. Assemble bowls by placing a base of lettuce or cauliflower rice (if using). Top with cooked chicken, diced cucumber, cherry tomatoes, red onion, Kalamata olives, and crumbled feta.
  4. Drizzle generously with the creamy tzatziki sauce. Serve immediately, with extra sauce on the side if desired.
