For the Crust:
- 1 lb ground lamb and beef blend
- 1/2 cup finely chopped red onion
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4 cup chopped fresh parsley
- 1 egg, lightly beaten
- 1/4 cup breadcrumbs
- Salt and black pepper to taste
- 2 cups cooked basmati rice
- 1 cup diced cucumber
- 1 cup cherry tomatoes, halved
- 1/4 cup sliced Kalamata olives
- 1/4 cup crumbled feta cheese
- 1 cup tzatziki sauce
- Fresh dill for garnish
- Lemon wedges for serving
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine ground meat, red onion, garlic, oregano, cumin, paprika, parsley, egg, breadcrumbs, salt, and pepper. Mix until well combined.
- Shape the mixture into 1-inch meatballs and place on the prepared baking sheet. Bake for 18-20 minutes, until cooked through and golden.
- Divide cooked rice among four bowls. Top each with meatballs, cucumber, tomatoes, olives, and feta cheese.
- Drizzle generously with tzatziki sauce and garnish with fresh dill. Serve with lemon wedges on the side.
