Description

A vibrant and healthy bowl featuring spiced lamb and beef meatballs over fluffy rice, topped with creamy tzatziki and fresh Mediterranean vegetables.

For the Crust:

  • 1 lb ground lamb and beef blend
  • 1/2 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 cup chopped fresh parsley
  • 1 egg, lightly beaten
  • 1/4 cup breadcrumbs
  • Salt and black pepper to taste
  • 2 cups cooked basmati rice
  • 1 cup diced cucumber
  • 1 cup cherry tomatoes, halved
  • 1/4 cup sliced Kalamata olives
  • 1/4 cup crumbled feta cheese
  • 1 cup tzatziki sauce
  • Fresh dill for garnish
  • Lemon wedges for serving

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground meat, red onion, garlic, oregano, cumin, paprika, parsley, egg, breadcrumbs, salt, and pepper. Mix until well combined.
  3. Shape the mixture into 1-inch meatballs and place on the prepared baking sheet. Bake for 18-20 minutes, until cooked through and golden.
  4. Divide cooked rice among four bowls. Top each with meatballs, cucumber, tomatoes, olives, and feta cheese.
  5. Drizzle generously with tzatziki sauce and garnish with fresh dill. Serve with lemon wedges on the side.

Notes

You can customize the seasonings to taste.
