For the Crust:
- 1 lb ground lamb
- 1/2 cup cooked rice
- 1/2 cup diced cucumber
- 1/4 cup diced red onion
- 1/4 cup chopped cherry tomatoes
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp cumin
- Salt and pepper to taste
- 1/2 cup plain Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp olive oil
Instructions
1. Prepare the Crust:
- In a bowl, mix ground lamb, oregano, garlic powder, cumin, salt, and pepper. Form into small meatballs.
- Heat olive oil in a skillet over medium heat. Cook meatballs until browned and cooked through, about 8-10 minutes.
- In a small bowl, combine Greek yogurt, lemon juice, and diced cucumber to make the tzatziki sauce.
- Assemble bowls by dividing rice among them, topping with meatballs, red onion, cherry tomatoes, feta, and parsley.
- Drizzle with tzatziki sauce and serve immediately.
