A vibrant and healthy bowl featuring spiced lamb meatballs, fluffy rice, crisp vegetables, and a cool tzatziki sauce.

For the Crust:

  • 1 lb ground lamb
  • 1/2 cup cooked rice
  • 1/2 cup diced cucumber
  • 1/4 cup diced red onion
  • 1/4 cup chopped cherry tomatoes
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 1/2 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. In a bowl, mix ground lamb, oregano, garlic powder, cumin, salt, and pepper. Form into small meatballs.
  2. Heat olive oil in a skillet over medium heat. Cook meatballs until browned and cooked through, about 8-10 minutes.
  3. In a small bowl, combine Greek yogurt, lemon juice, and diced cucumber to make the tzatziki sauce.
  4. Assemble bowls by dividing rice among them, topping with meatballs, red onion, cherry tomatoes, feta, and parsley.
  5. Drizzle with tzatziki sauce and serve immediately.
