For the Crust:
- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Cook the orzo according to package directions until al dente, then drain and rinse under cold water to cool.
- In a large bowl, combine the cooled orzo, cherry tomatoes, cucumber, olives, feta cheese, red onion, parsley, and dill.
- In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss gently until everything is evenly coated.
- Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
