Description

A vibrant and refreshing pasta salad packed with Mediterranean flavors, featuring orzo, cherry tomatoes, cucumbers, olives, and feta cheese, tossed in a zesty lemon-herb dressing.

For the Crust:

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Cook the orzo according to package directions until al dente, then drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooled orzo, cherry tomatoes, cucumber, olives, feta cheese, red onion, parsley, and dill.
  3. In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad and toss gently until everything is evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
