For the Crust:
- 1 cup whole-milk ricotta cheese
- 4 pita bread rounds, warmed and cut into wedges
- 1/2 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives, pitted
- 1/4 cup cucumber, diced
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- Fresh mint leaves for garnish
Instructions
1. Prepare the Crust:
- In a small bowl, mix ricotta with a pinch of salt and pepper; spread evenly on a serving board.
- Arrange pita wedges around the ricotta on the board.
- Scatter cherry tomatoes, olives, and cucumber over the board.
- Drizzle olive oil and lemon juice over the ricotta and toppings.
- Sprinkle with dried oregano and garnish with fresh mint leaves.
- Serve immediately while pita is warm.
