For the Crust:
- 2 cups fresh spinach, finely chopped
- 1 cup crumbled feta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1 large egg, beaten
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 2 tablespoons olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine spinach, feta, Parmesan, breadcrumbs, egg, garlic, oregano, pepper, and salt. Mix until well combined.
- Scoop tablespoon-sized portions of the mixture, shape into small patties, and place on the prepared baking sheet.
- Brush each patty lightly with olive oil and bake for 20-25 minutes, or until golden and crispy.
- Serve warm as an appetizer or snack.
