Savory, crispy baked crisps loaded with fresh spinach, tangy feta, and Mediterranean herbs.


Ingredients

For the Crust:

  • 2 cups fresh spinach, finely chopped
  • 1 cup crumbled feta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 1/4 cup almond flour
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine spinach, feta, Parmesan, egg, almond flour, oregano, garlic powder, and pepper. Mix until well combined.
  3. Scoop tablespoon-sized portions of the mixture onto the baking sheet, flattening slightly into crisp shapes. Drizzle with olive oil.
  4. Bake for 20-25 minutes, or until edges are golden and crisps are firm. Let cool before serving.

Notes

You can customize the seasonings to taste.
