A savory, crispy appetizer featuring fresh spinach, tangy feta, and Mediterranean herbs, baked to golden perfection.


Ingredients

For the Crust:

  • 2 cups fresh spinach, finely chopped
  • 1 cup crumbled feta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 1/4 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 2 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine spinach, feta, Parmesan, egg, breadcrumbs, garlic, oregano, pepper, and salt. Mix until well combined.
  3. Scoop tablespoon-sized portions of the mixture, shape into small patties, and place on the baking sheet. Brush lightly with olive oil.
  4. Bake for 20-25 minutes, flipping halfway through, until golden and crisp. Serve warm.
