For the Crust:
- 1 lb sirloin steak, sliced
- 1 cup Greek yogurt
- 1 cucumber, grated and drained
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tsp dried dill
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Season the steak slices with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook steak to desired doneness, about 3-4 minutes per side.
- In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and dill to make the tzatziki sauce. Chill until ready to serve.
- Assemble bowls by dividing quinoa among four bowls. Top with cooked steak, cherry tomatoes, red onion, and Kalamata olives. Drizzle generously with tzatziki sauce.
