For the Crust:

  • 1.5 lbs beef chuck, cut into 1-inch cubes
  • 1 can (14 oz) coconut milk
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 2 tbsp vegetable oil
  • 1 cup beef broth
  • Salt and black pepper to taste
  • Fresh cilantro for garnish

Instructions

1. Prepare the Crust:

  1. Heat oil in a large pot over medium-high heat. Season beef with salt and pepper, then brown on all sides. Remove and set aside.
  2. In the same pot, add onion and cook until soft. Stir in garlic, ginger, curry powder, cumin, coriander, and turmeric, cooking for 1 minute until fragrant.
  3. Return beef to the pot. Pour in coconut milk and beef broth, bring to a simmer. Cover and cook on low heat for 1.5 to 2 hours, until beef is tender.
  4. Adjust seasoning with salt and pepper. Serve hot, garnished with fresh cilantro.

Notes

You can customize the seasonings to taste.
