A vibrant and elegant salad featuring warm melted brie, sweet-tart cranberries, crisp pears and apples, and delicate feta snowflakes, all tossed in a light honey-balsamic dressing.

For the Crust:

  • 1 wheel of brie cheese (8 oz)
  • 2 cups mixed greens (such as arugula and spinach)
  • 1/2 cup dried cranberries
  • 1 ripe pear, thinly sliced
  • 1 apple (such as Honeycrisp), thinly sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup walnuts, toasted
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Place the brie wheel on a baking sheet and bake for 10-12 minutes until soft and melted in the center.
  2. In a large bowl, combine mixed greens, dried cranberries, sliced pear, sliced apple, and toasted walnuts.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper to make the dressing.
  4. Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.
  5. Transfer the salad to serving plates. Carefully place a portion of the warm melted brie on top of each salad.
  6. Sprinkle crumbled feta cheese over the salads to create ‘snowflakes’. Serve immediately while the brie is still warm.

Notes

You can customize the seasonings to taste.
