For the Crust:
- 4 boneless, skinless chicken breasts
- 4 oz cream cheese, softened
- 1/4 cup blackberry jam
- 1 jalapeño, seeded and finely diced
- 1/2 cup shredded Monterey Jack cheese
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a bowl, mix cream cheese, blackberry jam, diced jalapeño, Monterey Jack cheese, garlic powder, smoked paprika, salt, and pepper until well combined.
- Slice a pocket into each chicken breast, being careful not to cut all the way through. Stuff each breast with the blackberry jalapeño mixture and secure with toothpicks.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden brown.
- Transfer skillet to the oven and bake for 20-25 minutes, or until chicken is cooked through and stuffing is melty.
- Let rest for 5 minutes before serving.
