Description

A savory and sweet chicken dish featuring tender chicken breasts stuffed with a spicy jalapeño and blackberry cream cheese filling, then baked to perfection.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 4 oz cream cheese, softened
  • 1/4 cup blackberry jam
  • 1 jalapeño, seeded and finely diced
  • 1/2 cup shredded Monterey Jack cheese
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix cream cheese, blackberry jam, diced jalapeño, Monterey Jack cheese, garlic powder, smoked paprika, salt, and pepper until well combined.
  3. Slice a pocket into each chicken breast, being careful not to cut all the way through. Stuff each breast with the blackberry jalapeño mixture and secure with toothpicks.
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden brown.
  5. Transfer skillet to the oven and bake for 20-25 minutes, or until chicken is cooked through and stuffing is melty.
  6. Let rest for 5 minutes before serving.
