Tender chicken breasts stuffed with a sweet and spicy blackberry jalapeño filling, then baked until juicy and melty.

For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup fresh blackberries
- 1–2 fresh jalapeños, finely diced
- 4 oz cream cheese, softened
- 1/2 cup shredded Monterey Jack cheese
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- In a bowl, mash blackberries with a fork. Mix in diced jalapeños, cream cheese, Monterey Jack, garlic powder, paprika, salt, and pepper until well combined.
- Cut a pocket into the thickest part of each chicken breast. Stuff each with the blackberry-jalapeño mixture and secure with toothpicks.
- Brush chicken with olive oil and season the outside with salt and pepper. Place in the baking dish.
- Bake for 25-30 minutes, or until chicken is cooked through and filling is bubbly. Let rest 5 minutes before serving, garnished with cilantro.
