Description

Tender chicken breasts stuffed with a sweet and spicy blackberry jalapeño filling, then baked until juicy and melty.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh blackberries
  • 12 fresh jalapeños, finely diced
  • 4 oz cream cheese, softened
  • 1/2 cup shredded Monterey Jack cheese
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a bowl, mash blackberries with a fork. Mix in diced jalapeños, cream cheese, Monterey Jack, garlic powder, paprika, salt, and pepper until well combined.
  3. Cut a pocket into the thickest part of each chicken breast. Stuff each with the blackberry-jalapeño mixture and secure with toothpicks.
  4. Brush chicken with olive oil and season the outside with salt and pepper. Place in the baking dish.
  5. Bake for 25-30 minutes, or until chicken is cooked through and filling is bubbly. Let rest 5 minutes before serving, garnished with cilantro.

You can customize the seasonings to taste.
