For the Crust:
- 1 cup phyllo dough, finely chopped
- 1/4 cup melted butter
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup chopped walnuts
- 1/4 cup honey
- 1 tsp ground cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Line a muffin tin with 12 paper liners.
- Mix chopped phyllo dough with melted butter. Press about 1 tablespoon into the bottom of each liner to form a crust.
- In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla. Fold in half of the chopped walnuts.
- Divide the cheesecake batter evenly among the cups. Bake for 20-25 minutes, until set. Let cool completely.
- Combine honey, cinnamon, and remaining walnuts. Drizzle over cooled cheesecakes. Chill for at least 2 hours before serving.
