For the Crust:
- 1 cup low-fat cottage cheese
- 1 medium apple, finely grated
- 1 large egg
- 1/2 cup almond flour
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/4 tsp nutmeg
- 1 tsp baking powder
- Pinch of salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a mini muffin tin with paper liners.
- In a bowl, mix cottage cheese, grated apple, egg, and vanilla extract until well combined.
- Add almond flour, cinnamon, nutmeg, baking powder, and salt. Stir until a thick batter forms.
- Spoon batter into prepared muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes, or until tops are golden and a toothpick inserted comes out clean.
- Let cool slightly before serving.
