For the Crust:

  • 1 cup low-fat cottage cheese
  • 1 medium apple, finely grated
  • 1 large egg
  • 1/2 cup almond flour
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 tsp nutmeg
  • 1 tsp baking powder
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  2. In a bowl, mix cottage cheese, grated apple, egg, and vanilla extract until well combined.
  3. Add almond flour, cinnamon, nutmeg, baking powder, and salt. Stir until a thick batter forms.
  4. Spoon batter into prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes, or until tops are golden and a toothpick inserted comes out clean.
  6. Let cool slightly before serving.
