For the Crust:
- 1 package refrigerated pie crust (or homemade dough for 1 pie)
- 1 cup pecans, chopped
- 1/2 cup brown sugar, packed
- 1/4 cup corn syrup
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin.
- Roll out pie crust and cut into 24 rounds to fit mini muffin cups. Press each round into a cup.
- In a bowl, mix pecans, brown sugar, corn syrup, egg, melted butter, vanilla, and salt until well combined.
- Spoon filling into each crust-lined cup, filling about 3/4 full.
- Bake for 15-18 minutes, until crust is golden and filling is set. Cool in pan 5 minutes, then transfer to a wire rack.
