A festive and flavorful mini pizza featuring creamy brie, tart cranberries, crunchy toasted walnuts, and a spicy-sweet hot honey drizzle.

For the Crust:

  • 4 mini pizza crusts or naan rounds
  • 8 oz brie cheese, sliced
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts, toasted and chopped
  • 1/4 cup honey
  • 1 tsp red pepper flakes
  • 1 tbsp olive oil
  • Fresh thyme for garnish
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Place mini pizza crusts on a baking sheet.
  2. Brush each crust lightly with olive oil and season with a pinch of salt and pepper.
  3. Arrange brie slices evenly over the crusts, then sprinkle with dried cranberries and toasted walnuts.
  4. Bake for 10-12 minutes, until the crust is golden and the cheese is melted and bubbly.
  5. While pizzas bake, warm honey and red pepper flakes in a small saucepan over low heat for 2-3 minutes.
  6. Drizzle the hot honey over the baked pizzas and garnish with fresh thyme before serving.
