Description

Delicate, spiced pumpkin tartlets topped with creamy goat cheese and a drizzle of aromatic thyme-infused honey.


Ingredients

For the Crust:

  • 1 package (2 sheets) frozen puff pastry, thawed
  • 1 cup canned pumpkin puree
  • 1/4 cup brown sugar
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 4 oz goat cheese, softened
  • 2 tbsp honey
  • 1 tsp fresh thyme leaves
  • 1 egg, beaten (for egg wash)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Roll out puff pastry and cut into 3-inch circles. Press into mini tart pans.
  2. In a bowl, mix pumpkin puree, brown sugar, pumpkin pie spice, and salt. Spoon into pastry shells.
  3. Bake for 18-20 minutes, until pastry is golden. Let cool completely.
  4. Top each tartlet with a dollop of goat cheese. Warm honey with thyme, strain, and drizzle over tartlets before serving.

Notes

You can customize the seasonings to taste.
