For the Crust:
- 1 package (2 sheets) frozen puff pastry, thawed
- 1 cup canned pumpkin puree
- 1/4 cup brown sugar
- 1 tsp pumpkin pie spice
- 1/4 tsp salt
- 4 oz goat cheese, softened
- 2 tbsp honey
- 1 tsp fresh thyme leaves
- 1 egg, beaten (for egg wash)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Roll out puff pastry and cut into 3-inch circles. Press into mini tart pans.
- In a bowl, mix pumpkin puree, brown sugar, pumpkin pie spice, and salt. Spoon into pastry shells.
- Bake for 18-20 minutes, until pastry is golden. Let cool completely.
- Top each tartlet with a dollop of goat cheese. Warm honey with thyme, strain, and drizzle over tartlets before serving.
