For the Crust:

  • 1 box fudgy brownie mix (plus required eggs, oil, and water)
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup semi-sweet chocolate chips
  • Whipped cream and fresh berries for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 24-cup mini muffin tin.
  2. Prepare brownie mix according to package instructions. Spoon batter into muffin cups, filling each about 2/3 full.
  3. In a medium bowl, beat cream cheese, sugar, egg, and vanilla until smooth. Spoon about 1 teaspoon of cheesecake mixture onto the center of each brownie cup.
  4. Bake for 15-18 minutes, until cheesecake is set and brownies are cooked through. Let cool in pan for 10 minutes, then transfer to a wire rack.
  5. Melt chocolate chips and drizzle over cooled cups. Garnish with whipped cream and berries if desired. Serve chilled or at room temperature.
