For the Crust:
- 1 baguette, sliced into 1/2-inch rounds
- 2 medium potatoes, diced into small cubes
- 8 oz feta cheese
- 1/4 cup olive oil, divided
- 2 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Toss potato cubes with 2 tbsp olive oil, rosemary, salt, and pepper. Roast for 20-25 minutes until golden and tender.
- Arrange baguette slices on a baking sheet, brush with remaining olive oil, and bake for 8-10 minutes until crisp and lightly golden.
- In a food processor, blend feta cheese and minced garlic until smooth and whipped.
- Spread a layer of whipped feta on each crostini, top with roasted potatoes, and garnish with fresh parsley before serving.
