Description

A savory-sweet roasted sweet potato dish with a glossy miso-maple glaze, topped with toasted sesame seeds and fresh scallion curls for a vibrant, umami-packed side or light main.

Ingredients

Scale

For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch thick rounds
  • 2 tablespoons white miso paste
  • 3 tablespoons pure maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon sesame seeds
  • 2 scallions, thinly sliced into curls
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together miso paste, maple syrup, rice vinegar, olive oil, and sesame oil until smooth.
  3. Arrange sweet potato rounds on the baking sheet. Brush both sides generously with the miso-maple glaze. Season lightly with salt and pepper.
  4. Roast for 25-30 minutes, flipping halfway through, until tender and caramelized.
  5. While roasting, toast sesame seeds in a dry skillet over medium heat for 2-3 minutes until golden. Set aside.
  6. Remove sweet potatoes from oven. Sprinkle with toasted sesame seeds and scallion curls before serving.

Notes

You can customize the seasonings to taste.
