A rich and savory soup featuring earthy mushrooms and sweet caramelized onions, topped with crispy, cheesy toasties for the perfect comfort meal.

For the Crust:

  • 2 large onions, thinly sliced
  • 4 cups sliced cremini mushrooms
  • 4 tablespoons butter
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper to taste
  • 4 slices crusty bread
  • 1 cup shredded Gruyère cheese

Instructions

1. Prepare the Crust:

  1. Melt 2 tablespoons of butter in a large pot over medium heat. Add the sliced onions and cook, stirring occasionally, until deeply golden and caramelized, about 20 minutes.
  2. Add the remaining butter, mushrooms, and garlic to the pot. Cook until mushrooms are tender and browned, about 8-10 minutes.
  3. Pour in the vegetable broth and bring to a simmer. Stir in the heavy cream and thyme, then season with salt and pepper. Simmer for 10 minutes.
  4. While the soup simmers, preheat the broiler. Place bread slices on a baking sheet, top with shredded Gruyère, and broil until cheese is melted and bubbly, about 2-3 minutes.
  5. Ladle the soup into bowls, top each with a cheesy toasty, and serve immediately.
