For the Crust:
- 2 large onions, thinly sliced
- 4 cups sliced cremini mushrooms
- 4 tablespoons butter
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1/2 cup heavy cream
- 1 teaspoon fresh thyme leaves
- Salt and black pepper to taste
- 4 slices crusty bread
- 1 cup shredded Gruyère cheese
Instructions
1. Prepare the Crust:
- Melt 2 tablespoons of butter in a large pot over medium heat. Add the sliced onions and cook, stirring occasionally, until deeply golden and caramelized, about 20 minutes.
- Add the remaining butter, mushrooms, and garlic to the pot. Cook until mushrooms are tender and browned, about 8-10 minutes.
- Pour in the vegetable broth and bring to a simmer. Stir in the heavy cream and thyme, then season with salt and pepper. Simmer for 10 minutes.
- While the soup simmers, preheat the broiler. Place bread slices on a baking sheet, top with shredded Gruyère, and broil until cheese is melted and bubbly, about 2-3 minutes.
- Ladle the soup into bowls, top each with a cheesy toasty, and serve immediately.
