For the Crust:
- 1 cup chia seeds
- 2 cups coconut milk
- 1/4 cup maple syrup
- 1 tbsp lime zest
- 1/4 cup lime juice
- 1/2 cup shredded coconut
- 1/4 tsp vanilla extract
- Pinch of salt
Instructions
1. Prepare the Crust:
- In a bowl, whisk together chia seeds, coconut milk, maple syrup, lime zest, lime juice, and vanilla extract until well combined.
- Let the mixture sit for 10 minutes, then stir again to prevent clumps. Cover and refrigerate for at least 4 hours or overnight until thickened.
- Once set, stir in shredded coconut and salt. Press the mixture into a lined baking dish and chill for another hour before slicing into bars.
