Description

A simple, moist, and flavorful bread loaded with tart cranberries and crunchy nuts, requiring no kneading for easy preparation.

For the Crust:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup orange juice
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 1 cup fresh or frozen cranberries
  • 1/2 cup chopped walnuts or pecans

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix orange juice, egg, and vegetable oil until well combined.
  4. Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in cranberries and nuts.
  6. Pour batter into prepared loaf pan and spread evenly.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
