For the Crust:
- 4 oz semi-sweet chocolate, chopped
- 4 tbsp unsalted butter
- 1/2 cup powdered sugar
- 2 large eggs
- 2 large egg yolks
- 1 tsp vanilla extract
- 1/4 cup all-purpose flour
- Pinch of salt
- Butter and cocoa powder for ramekins
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C). Butter and lightly dust four 6-oz ramekins with cocoa powder.
- Melt chocolate and butter in a double boiler or microwave, stirring until smooth. Let cool slightly.
- Whisk together powdered sugar, eggs, egg yolks, and vanilla until pale. Stir in chocolate mixture, then fold in flour and salt until just combined.
- Divide batter evenly among prepared ramekins. Bake for 12-14 minutes until edges are firm but center is soft.
- Let cool for 1 minute, then invert onto plates. Serve immediately with ice cream or berries if desired.
