Description

Decadent individual chocolate cakes with a warm, flowing molten center that oozes with every bite.


Ingredients

For the Crust:

  • 4 oz semi-sweet chocolate, chopped
  • 4 tbsp unsalted butter
  • 1/2 cup powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1/4 cup all-purpose flour
  • Pinch of salt
  • Butter and cocoa powder for ramekins

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C). Butter and lightly dust four 6-oz ramekins with cocoa powder.
  2. Melt chocolate and butter in a double boiler or microwave, stirring until smooth. Let cool slightly.
  3. Whisk together powdered sugar, eggs, egg yolks, and vanilla until pale. Stir in chocolate mixture, then fold in flour and salt until just combined.
  4. Divide batter evenly among prepared ramekins. Bake for 12-14 minutes until edges are firm but center is soft.
  5. Let cool for 1 minute, then invert onto plates. Serve immediately with ice cream or berries if desired.

You can customize the seasonings to taste.
