For the Crust:

  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup bold BBQ sauce
  • 1/4 cup honey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium-high heat. Add cubed chicken and cook until browned on all sides, about 5-7 minutes.
  2. Add diced onion and minced garlic to the skillet. Sauté until fragrant and softened, about 3 minutes.
  3. Stir in rice, chicken broth, BBQ sauce, honey, smoked paprika, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 20-25 minutes until rice is tender and liquid is absorbed.
  5. Remove from heat, let sit covered for 5 minutes. Fluff with a fork, garnish with fresh parsley, and serve warm.
