For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/2 cup bold BBQ sauce
- 1/4 cup honey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium-high heat. Add cubed chicken and cook until browned on all sides, about 5-7 minutes.
- Add diced onion and minced garlic to the skillet. Sauté until fragrant and softened, about 3 minutes.
- Stir in rice, chicken broth, BBQ sauce, honey, smoked paprika, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 20-25 minutes until rice is tender and liquid is absorbed.
- Remove from heat, let sit covered for 5 minutes. Fluff with a fork, garnish with fresh parsley, and serve warm.
