A simple, flavorful one-pan meal featuring tender chicken breasts and roasted vegetables, all infused with garlic and herbs for a quick and healthy dinner.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 4 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss chicken breasts and all vegetables with olive oil, minced garlic, rosemary, thyme, salt, and pepper until evenly coated.
  3. Arrange chicken and vegetables in a single layer on a large baking sheet.
  4. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
  5. Garnish with fresh parsley before serving.
