- 4 boneless, skinless chicken breasts
- 1 lb baby potatoes, halved
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 4 cloves garlic, minced
- 3 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- In a large bowl, toss chicken breasts and all vegetables with olive oil, minced garlic, rosemary, thyme, salt, and pepper until evenly coated.
- Arrange chicken and vegetables in a single layer on a large baking sheet.
- Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
- Garnish with fresh parsley before serving.
