For the Crust:
- 4 bone-in, skin-on chicken thighs
- 2 lemons, sliced
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lb baby potatoes, halved
- 1/2 cup chicken broth
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- In a large bowl, toss chicken thighs with olive oil, garlic, oregano, thyme, salt, and pepper.
- Arrange chicken skin-side up in a baking dish. Add potatoes and lemon slices around the chicken.
- Pour chicken broth into the dish and bake for 30-35 minutes, or until chicken is cooked through and potatoes are tender.
- Serve hot, garnished with fresh herbs if desired.
