Juicy chicken thighs roasted with fresh herbs, garlic, and zesty lemon for a simple yet flavorful one-pan meal.

For the Crust:

  • 4 bone-in, skin-on chicken thighs
  • 2 lemons, sliced
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lb baby potatoes, halved
  • 1/2 cup chicken broth

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss chicken thighs with olive oil, garlic, oregano, thyme, salt, and pepper.
  3. Arrange chicken skin-side up in a baking dish. Add potatoes and lemon slices around the chicken.
  4. Pour chicken broth into the dish and bake for 30-35 minutes, or until chicken is cooked through and potatoes are tender.
  5. Serve hot, garnished with fresh herbs if desired.
