For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 8 oz penne pasta
- 3 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Add chicken, season with salt, pepper, and Italian seasoning, and cook until browned, about 5-6 minutes.
- Add garlic and sun-dried tomatoes, sauté for 1 minute until fragrant. Stir in pasta and chicken broth, bring to a boil, then reduce heat and simmer for 12-15 minutes until pasta is tender and liquid is mostly absorbed.
- Stir in heavy cream, Parmesan, and spinach. Cook for another 2-3 minutes until spinach is wilted and sauce is creamy. Adjust seasoning if needed and serve immediately.
