For the Crust:
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup orzo pasta
- 4 cloves garlic, minced
- 1/4 cup unsalted butter
- 2 cups chicken broth
- 1 lemon, juiced and zested
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
- Salt and black pepper to taste
- 1 tsp dried oregano
Instructions
1. Prepare the Crust:
- Season chicken pieces with salt, pepper, and oregano. In a large pot or deep skillet, melt butter over medium-high heat. Add chicken and cook until browned, about 5-7 minutes.
- Add minced garlic to the pot and sauté for 1 minute until fragrant. Stir in orzo and cook for another minute to lightly toast.
- Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-12 minutes until orzo is tender and liquid is mostly absorbed.
- Stir in heavy cream, lemon zest, and Parmesan cheese until creamy and well combined. Cook for an additional 2-3 minutes until heated through.
- Garnish with fresh parsley and serve hot. Adjust seasoning with salt and pepper if needed.
