For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 1 cup orzo pasta
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 lemon, juiced and zested
- 3 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Season cubed chicken with salt and pepper. In a large pot, melt butter over medium heat and cook chicken until browned, about 5-7 minutes.
- Add minced garlic and cook for 1 minute until fragrant. Stir in orzo and cook for another minute to lightly toast.
- Pour in chicken broth and lemon juice, bring to a simmer, then reduce heat and cover. Cook for 10-12 minutes until orzo is tender and liquid is mostly absorbed.
- Stir in heavy cream, Parmesan cheese, and lemon zest. Cook for 2-3 more minutes until creamy. Garnish with fresh parsley before serving.
