For the Crust:
- 2 cans (15 oz each) butter beans, drained and rinsed
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup vegetable broth
- 1/2 cup heavy cream
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- Fresh parsley, chopped for garnish
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for another minute until fragrant.
- Add diced tomatoes, vegetable broth, dried oregano, smoked paprika, salt, and pepper. Bring to a simmer.
- Gently stir in butter beans and let the mixture simmer for 15 minutes, allowing flavors to meld.
- Reduce heat to low and stir in heavy cream. Cook for an additional 5 minutes until the sauce thickens slightly.
- Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.
