For the Crust:

  • 2 cans (15 oz each) butter beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  2. Stir in minced garlic and cook for another minute until fragrant.
  3. Add diced tomatoes, vegetable broth, dried oregano, smoked paprika, salt, and pepper. Bring to a simmer.
  4. Gently stir in butter beans and let the mixture simmer for 15 minutes, allowing flavors to meld.
  5. Reduce heat to low and stir in heavy cream. Cook for an additional 5 minutes until the sauce thickens slightly.
  6. Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.
