Description

A simple, hearty one-pan meal featuring tender chicken thighs, crispy roasted potatoes, and fresh green beans, all seasoned with herbs and baked to perfection.

For the Crust:

  • 4 bone-in, skin-on chicken thighs
  • 1 lb golden potatoes, quartered
  • 8 oz fresh green beans, trimmed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 1 lemon, sliced (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss potatoes and green beans with 1 tbsp olive oil, garlic powder, rosemary, paprika, salt, and pepper. Spread evenly on the baking sheet.
  3. Pat chicken thighs dry, rub with remaining olive oil, and season with salt and pepper. Place skin-side up among the vegetables.
  4. Bake for 30-35 minutes, until chicken is cooked through (internal temperature 165°F) and potatoes are golden and tender. Add lemon slices in the last 10 minutes if using.
  5. Let rest for 5 minutes before serving. Garnish with fresh herbs if desired.
