A simple, hearty one-pan meal featuring tender chicken thighs, crispy roasted potatoes, and fresh green beans, all seasoned with herbs and baked to perfection.

For the Crust:
- 4 bone-in, skin-on chicken thighs
- 1 lb golden potatoes, quartered
- 8 oz fresh green beans, trimmed
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried rosemary
- 1 tsp paprika
- Salt and black pepper to taste
- 1 lemon, sliced (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss potatoes and green beans with 1 tbsp olive oil, garlic powder, rosemary, paprika, salt, and pepper. Spread evenly on the baking sheet.
- Pat chicken thighs dry, rub with remaining olive oil, and season with salt and pepper. Place skin-side up among the vegetables.
- Bake for 30-35 minutes, until chicken is cooked through (internal temperature 165°F) and potatoes are golden and tender. Add lemon slices in the last 10 minutes if using.
- Let rest for 5 minutes before serving. Garnish with fresh herbs if desired.
