Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Mix in the lemon zest, lemon juice, and vanilla extract until well combined.
- Gradually add the flour and salt, mixing until a dough forms. If using, divide the dough and knead in Paas food coloring for desired colors.
- Roll the dough into 1-inch balls, place on the baking sheet, and flatten slightly with a fork.
- Bake for 12-15 minutes or until edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
