A delightful twist on classic shortbread, these cookies are infused with zesty lemon flavor and colored with Paas food coloring for a festive touch, perfect for spring or holiday gatherings.

For the Crust:

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • Paas food coloring (assorted colors, optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Mix in the lemon zest, lemon juice, and vanilla extract until well combined.
  4. Gradually add the flour and salt, mixing until a dough forms. If using, divide the dough and knead in Paas food coloring for desired colors.
  5. Roll the dough into 1-inch balls, place on the baking sheet, and flatten slightly with a fork.
  6. Bake for 12-15 minutes or until edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
